Root & Branch Bistro is built on the experience and second to none passion Chef AJ Kraft has for food and culinary integrity.  

The concept of Root & Branch came to life in 2017 after continuous feedback from the local community that Clermont desperately needed a quality dining option. After years of working in casual fine dining restaurants as well as regularly traveling long distances for an elevated dining experience, Chef Kraft considered a venture of his own. In partnership with his wife Dana, who also envisioned one day owning and operating a restaurant, the couple made the decision to follow their dreams and open Clermont’s most unique dining experience. Chef Kraft now has the ability to apply what he has learned and loved for so many years in his home town providing an elevated culinary experience and delivering exceptional service standards.

AJ & Dana’s goal is to deliver locally sourced food with integrity in an inviting and service oriented atmosphere. The Root & Branch brand allows for Clermont to have its first casual fine dining restaurant. As such, we look forward to consistently exceed the expectations of the community and our followers.

Kyle O’Brien

Kyle spent years working in casual fine dining restaurants across the Boston suburbs. During that time he had the privilege to work alongside a handful of talented and knowledgeable managers, chefs, servers, and bartenders. Kyle was given his first opportunity to manage a bar while enrolled in school to become a paramedic. When school finished he had no desire to escape the restaurant scene. He chose to stick with his passion and pursuit of great service, food, and drinks. Kyle’s family moved from Boston to Florida in 2012. He followed in 2018. He couldn’t be happier to have joined the Root & Branch team and looks forward to the restaurants growth into the future.

Elissa Hayward

Elissa has a Bachelor’s degree in Food Service Management as well as an an Associate’s of Applied Science in both; Culinary Arts and baking & pastry. She has gained much of her fine dining/upscale experience throughout restaurants located over much of the South East.
